Ami & Rod Quass
Ami and Rod Quass are the shareholders and founders of 2South Wine Bar and Restaurant. They have been longtime players in the Colorado Springs community. Rod invested years in youth ministry, and Ami is part of the realty world. This is their first venture into food and beverage, and it has truly been a profound and wild ride. They have been married 21 years, and have two beautiful daughters, with whom they share a life full of laughter and genuine gratitude. Rod and Ami love great food and wine, the mountains, and being together at their favorite time of day, 7pm on a beautiful Colorado night. They have three French bulldogs, who frankly seem more like little pigs than dogs, and who make them laugh every single day. They have poured their hearts not only into the business of 2South, but also into the staff. They have entrusted their vision to each and every employee. They regard the 2South team as an extension of their own family. This is crucial, because 2South is a family business to its core, and creating it has been a labor of love. Customers have seen Rod bartending, Ami wearing an apron and washing dishes, and Rilee and Claire running food. Rod and Ami are true partners. Together they strive to create a strong sense of community wherever they work and live. Above all else, it is faith that has brought them success in business, life, and love. They feel privileged to be part of the 2South experience.
Beth & Jerry Paulison
Beth and Jerry are the most recent addition to the 2South family. They partnered up with Rod and Ami in September of 2014 to become co-owners. As business continues to boom at 2South, Jerry and Beth look forward to getting their hands dirty behind the scenes, and getting to know the faces of the devoted clientele. Beth is a lover of food and Nascar, and a barbie collector. She is the kind of woman who makes things happen. Jerry is a lifelong foodie from Jersey who still misses the ocean but who came to Colorado to lay down roots. One might say he's got a touch of ADD, or that he's a bit of a germophobe. About one thing there is no question: he is thrilled to be part of the 2South team. Jerry and Beth are looking forward to blazing trails with their partners and friends Ami and Rod. Look out Old Colorado City. 2South has doubled its horsepower!
Becky is a transplant from the east coast. She has been serving in restaurants since 2004 and has been working for Ami and Rod since early 2013. She believes in the unprecedented charm of 2South and is thrilled to be working with a crew of friends that are as dear to her as family. In her down time she likes to read, write, and take pictures. She has an annoying tendency to sing often and at high volume, and a neurotic compulsion for list making. She is always looking for a new thrill or adventure. Among other brags, she has been thrown through glass, and set on fire. She believes in love, being present, and listening to your gut. Words to live by: “Don't ask what the world needs. Yes, Santana is named after Carlos. No, there is no relation. When she was born, her nine year old sister got the honor of naming her. She's from Michigan originally, and soon after moving to Colorado she took on 2South. Santana has worked nearly every position at the restaurant and, as the jack of all trades, is an integral part of the quality of 2South service. She has a rock collection that she would love to tell you about if you asked. She is fascinated with bugs and dinosaurs, and wishes she had more time to get to the museums. She spends the majority of her days getting dirty, as a gardener. Santana's energy is unmistakably bright. When she smiles the whole room feels it. “To be happy is one way of being wise.” -Collette
A relatively new face on the Colorado Springs food and drink scene, James is from West Palm Beach, Florida. With several years of 5-Star service and a quick wit, the transition to Bartending at 2South was a welcomed one. With a soft spot for homestyle cooking combined with a taste for the finer things in life, his passion for the food at the establishment is only echoed in his service. In his offtime, James enjoy's reading classic Science-Fiction, his favorite being Arthur C. Clarke's 2001: A Space Odyssey.
Cody Rilo has one of the most recognizable faces in Colorado Springs Food and Bev. For nearly two decades now she has been building a customer base that can rival that of any bartender in this town. She is a dog rescuer and a “foster failure”, which is how she ended up with Fern, with whom it was love at first sight. Her and her husband are the proud parents of three canine kids, and the proud founders of Koozapalooza (wouldn't you like to know). While helping furry friends find forever homes, Cody has found her own forever home in Colorado and wears it on her sleeve so to speak, through a tattoo of the Colorado flag. She believes in a plant based diet and does what she can to excite people about vegan food. She has been to a total of three Weird Al concerts. She likes drinking Jameson because she found out a long time ago that, “it is better to be a good liver than to have one.” She works like a mule and plays like the Irish. And she loves fiercely. Cody is a crafter, a do-it-yourselfer, and an enthusiast for any event which requires dressing in costume. When Cody took on 2South in the summer of 2014 it was nothing short of a gift.
Taylor joined the 2South family in August of 2014 and is originally from Oklahoma City. She has played many different roles on the team. Her flexibility and agreeable nature are an asset to a staff as small and unique as the one here at 2South. She loves candy, cake, and chocolate. Even more so though she loves Mexican food. She is building an ink zoo on her body, which so far consists of an African elephant and a black moor. She loves children and babies, and most of all her son Cale, who incidentally is named after the vegetable. Taylor is particularly fond of sneak attacks and if you hang around 2South long enough you will eventually get pummeled with a cork or branded with her red OUT OF STOCK stamp. She is truly a kid at heart.
Heather joined the 2South family in the summer of 2014, bringing boat loads of knowledge and restaurant experience with her. Previously she has managed food and bev teams at Phantom Canyon, the Blue Star, and Bourbon Brothers. As soon as she walked through the door of 2South she fit right in. She has a refreshing wit that she brings to her tables, and into the staff circle. This is quite appreciated, especially when everyone on the team is in the weeds and in need of comic relief. She knows how to laugh at herself, and helps others do the same. She is originally from Nebraska and has lived in Colorado for eight years. She loves rock climbing, acrylic painting, and gardening. But most of all she loves her daughter, and would do anything for her, including work nine shifts a week. Heather is an unshakeable rockstar server and the 2South team wouldn't be complete without her. And she wants you all to know that she will be taking over the world in the near future. Consider yourselves warned.
